Turkey time

Here's a little preview of what's to come on Thanksgiving turkeywise:


I'm going to season one with Tony Chachere's Cajun Creole Seasoning for the adventurous among us. I'll be smoking them with apple wood. The 'unseasoned' turkey probably won't be this dark-skinned. Both turkeys are about 12.5 lbs. I'm going to season the Jennie-O, and not season the Butterball. So don't complain about me seasoning one cause the Butterball costs 1 1/2 times as much. The only downside is that we won't be able to use the drippings for gravy so we'll just use some turkey stock to make it. Look at it this way: no straining!
